Recipe: Perfect Vegetarian bolognese

Ingredients of Vegetarian bolognese

  1. You need 4 medium of carrots.
  2. It's 3 stick of celery.
  3. It's 2 medium of onions.
  4. You need 15 medium of mushrooms.
  5. Prepare 2 tsp of garlic powder.
  6. It's 2 medium of tomatoes chopped.
  7. Prepare 1 tbsp of tomato puree.
  8. You need 1 of olive oil.
  9. Prepare 500 grams of passata.
  10. Prepare 10 of fresh basil leaves.
  11. You need 2 tsp of mixed Italian herbs.
  12. It's 1 of salt & pepper to taste.
  13. It's 6 of rings dried tagliatelle.
  14. You need 1 of grated cheese.
  15. You need 1 of salt and pepper to taste.

As a vegetarian (and just a carb lover in general), pasta is one of my favorite meals. It's a great way to get lots of veggies, pasta, and protein for a well rounded meal. To replace the meat, I used a mixture of mushrooms, ground walnuts, and textured soy protein. I've seen more than one lentil bolognese recipe, but for me that texture just isn't right.

Vegetarian bolognese instructions

  1. Grate the carrots.
  2. Finely chop onion and celery and mix with carrots and level teaspoon of garlic powder.
  3. Fry mix in a little olive oil untill 70% cooked.
  4. Fry mushrooms in a little olive oil (vegetable oil will do).
  5. Mix chopped tomatoes, puree, and level teaspoon garlic powder with a little hot water.
  6. Add mix to mushrooms.
  7. Add mixed herbs and mix together.
  8. Add veg mix.
  9. Add passata and mix and simmer for 2 hours minimum, add water as needed.
  10. After 2 hours add choped basil leaves simmer for 1 hour.
  11. Add salt and pepper to taste.
  12. Boil pasta and when 75% cooked add to mix.
  13. Mix and simmer for 5 mins stirring regularly.
  14. Serve with grated cheese of choice and garlic bread, or in this case cheese and pear soda bread..
